A while back, I did a post on how and why I went vegan. Since going vegan, there’s been one benefit in particular that I’ve been loving – I cook + bake way more than I use to! 🙂 It’s been a really fun process to learn new recipes, create my own and look at grocery shopping in a totally different way.
So for today’s post, I thought it’d be fun to share some of my favorite meals to make recently!!

What I Eat in a Day (Vegan)
Breakfast: Cereal w/ Almond Milk, Apples + Almond Butter
I usually can’t function without my morning coffee and I have to admit, when I decided to go vegan I thought I was going to be stuck getting use to black coffee but the So Nice Almond creamer I use is actually amazing and I am in love <3 Once I’m hungry enough for food, my go to is usually this peanut-butter granola with almond milk. The apples that day were just way more convenient on my cereal than bringing on the road xD
Lunch: Pasta + Sautéed Veggies
Usually I’m a red sauce kinda girl but I found this pesto recipe that got me inspired and I actually really liked it! I also threw in some broccoli, vegan feta, spinach, sun-dried tomatoes and onions. Post-pic, I also decided to sprinkle on some nutritional yeast!
Favorite Snacks: Bars, Coconut Yogurt & Smoothies!
My snacks are always changing but lately I’ve been buying a ton of cliff bars and these adorable little Rivera yogurt pots – they’re so convenient for work! I usually like a nice smoothie after a workout or when I know I’m going to have a veeery long morning at work xD Typically peanut-butter + chocolate protein powder + spinach are my jam but lately I’ve been loving this peach smoothie! I usually add oats, dates, cinnamon and vanilla but recently threw in some vanilla protein powder too which also tasted delicious <3
Dinner: Pizza on Naan Bread + Veggie Salad
Pizza and salad are two of the most versatile meals imo – plus pizza’s are one of my favorite ways to satisfy that junkfood craving while also piling it high with veggies! In my salad, I just threw in whatever veggies I had on hand + some beets, walnuts and a balsamic/turmeric dressing! How do you like your pizza?!
